Nut milks

Nut milks are an easy to make and economical dairy alternative. Nut milks are rich in minerals and good fats called Omega 3 fats which our brains need to function well. Almond milks have the most alkalising effect on the body and all nut milks lower cholesterol, reduce high blood pressure and boost up mood elevating hormones.
Many expensive processed nut and grain milks are full of vegetable oils and various sugars and do not taste fresh. You can make your own nut milk and once you have separated the nut milk from the pulp, you can freeze it to make biscuits or cakes.
I like to put the pulp in the dehydrator to dry out and use to replace wheat or flour in recipes. You can blend the pulp up or put it through the grain mill of your juicer. Keep your nut milk in the fridge for two or three days and store excess in the freezer for a couple of months.

To make nut milks the first step is to soak one cup of nuts overnight in filtered water in the fridge. You can make nut milks without soaking the nuts first, however they will blend more easily if you have time to do this. Strain the nuts and discard the soak water.
Generally you can blend one cup of nuts with three or four cups of filtered water, depending on how creamy you want the nut milk to be. You will need a high powered blender and it should take one minute to blend till the nuts are fine. You then strain the liquid through a fine strainer, muslin cloth or nut milk bag into a large bowl. Squeeze out as much liquid as possible. Pour the milk back into the blender and blend with a vanilla bean or a teaspoon of vanilla bean paste or vanilla extract. You can add sweetness by blending in two or three pitted dates. Sometimes I like to blend the nuts with young coconut water instead of filtered water for its blood cleaning and energising properties. It can boost the electrical conductance within your cells.

If you are lactose or dairy intolerant, then nut milks are a great alternative and you can boost up the calcium quota by adding a tablespoon of the sesame seed paste tahini before blending.
All nuts are suitable to use except peanuts which are actually a legume. There is no need to strain cashew nut milk.

Use nut milks on cereals made with seeds and nuts and fruit, on their own as a drink or add organic superfood supplements, probiotics, natural protein powders, frozen fruits or maca powder.

Banana Chocolate Smoothie

1 large ripe organic banana, use a frozen banana for a creamier drink
2 cups of almond milk
1 tablespoon of organic hulled tahini
2 tablespoons of organic carob powder or 1 tablespoon of organic cacao powder
1 teaspoon of organic raw honey
Put all the ingredients in a blender and blend on high until smooth.

Strawberry Shake

1 cup of frozen strawberries
1 cup of coconut water
1 cup of nut milk or rice milk, coconut milk or seed milk
1 tablespoon of natural protein powder or a tablespoon of nut butter
2 fresh pitted dates or a teaspoon of organic honey or stevia
Half a teaspoon of vanilla extract
Put all the ingredients in a blender and blend on high until smooth.

Green Smoothies can be created using green leaves, fruit and ice blended into a sweet nutrient rich drink. Filtered water or young coconut water can be added. Leafy greens have an alkalising effect on the body and are blood builders, helping to increase oxygen levels and assist digestion by boosting digestive stomach acids.
